Great ideas for thanksgiving leftovers
Leftovers might just be the best thing about Thanksgiving. You can certainly heat up a plate and enjoy the same meal all over again, or you can try making entirely new dishes. Turkey is the star of many of these, but there's also stuffed mushrooms, muffins, and even ideas for leftover wine (you know, if you have any).
Basic Turkey Stock
Good for soups, sauces or cooking couscous or rice, it's always wise to make a pot of turkey stock from the leftover turkey pieces. Nothing tastes as good as the real thing.
Turkey, Sweet Potato, and Watercress Salad
Turkey and sweet potato cubes are a nice complement to peppery watercress in this salad that captures all the flavors of the season.
We love frittatas because you can put absolutely anything you want in them. Try a turkey frittata, or make a leftover veggie frittata with whatever other leftovers you have in the fridge.
Sweet Potato Hash
Good for breakfast, lunch, or dinner, this turkey and sweet potato hash gets a big flavor boost from added apples and thyme.
Jerk Turkey Chili
A lot of people make chili with their leftover turkey, but this jerk chili is in a class by itself. Flavors such as allspice, nutmeg, fresh thyme and a secret ingredient (okay, it's dark chocolate!) will make this dish an instant post-Thanksgiving favorite.
Any leftover turkey and dressing can be mixed together to create a tasty little bite inside roasted, stuffed mushrooms.
Think of this as your entire Thanksgiving dinner on a big, leafy plate of greens. See how to turn your cornbread dressing into croutons.
Cranberry Carrot Muffins
Breakfast gets the Thanksgiving nod when you use cranberry relish to make muffins. Leftover-carrot puree makes them extra moist and yummy.
